5 Great Side Dishes to Serve With Duck

A very sophisticated, delicious main course to serve during a dinner party is duck. And you can truly appreciate duck only with a side dish that enhance the savor of duck meat. If you intend to cook a duck for your guests or for your family, you need to pick the perfect side dish. Duck meat is tender, sweet and, unlike turkey or chicken, there's a lot of meat on the bones. The best side dishes for duck are those based on vegetables, accompanied by sour and sweet gravy.

Cast Iron Pan

Cabbage works great with duck. It might not sound so glamorous, but if it's cooked right, cabbage is an extraordinary side dish for duck. Chop the cabbage as finely as you can. Put a large pan on fire and add some sort of fat. If you have duck fat, it's perfect. If not, you can simply replace the duck fat with butter or a good quality vegetable oil. Wait until the fat from the pan heats up and add the finely chopped cabbage. For about 15 minutes, keep stirring inside the pan, to avoid burning the cabbage. After the cabbage turns softer and gets some color, you can put a few drops of water, to help the cabbage cooks better. The cabbage is done when it becomes really soft and tender and gets a caramel-like flavor and color. Generally, you need about 30 minutes to cook the cabbage. It's a very simple, but sweet and flavored side dish, that works great with duck.

Cast Iron Pan

Roasted vegetables are another great side dish you can serve with duck. It's very easy to make, it will take you only 10 minutes to prepare and another about 50 minutes in the oven. You can use all your favorite vegetables: carrots, celery and parsley roots, onions or garlic. Cut all the vegetables in pieces that have about the same size, wash them in cold water and let them dry. In the mean time, take a large pan, add some olive oil inside and start flavoring the oil with salt, pepper, smoked paprika, rosemary and oregano. Mix the olive oil and the flavors very well, and then add the vegetables. Make sure that the vegetables picked up some flavored oil on all sides. Cover the pan with some aluminum foil and place it in the hot oven for about 30 minutes. Then uncover the pan and let it inside the oven for another 20 minutes, until all the vegetables are well roasted.

A warm red beet salad also goes very well with duck. Although it might take you a while to cook the red beet, the savor of this salad will perfectly complement the taste of duck meat. The first step is to cook the red beet. Wash them really well and put them inside the hot oven, in a pan covered with parchment paper. That step will take a while - red beets taste much better if you bake the entire root, without cutting it in small pieces. However, it will take about two hours for the red beets to be bakes. Once they are ready, you have to chop the as finely as you can. Flavor the red beet salad with olive oil, salt, a pinch of sugar, a small quantity of horseradish and a generous amount of caraway seeds.

Mashed potatoes with caramelized onions are a sweet and flavored side dish, ideal for duck. Prepare the mashed potatoes as you normally do, with plenty of butter and milk. Cut the onions in slices and put them in a hot pan with olive oil, stirring continuously. In about 20 minutes, the onions will become soft and caramelized - they are ready when the color is light brown. The combination between the mash potatoes, caramelized onions and duck is just divine.

Mashed pumpkin is simply delicious with duck. Bake the pumpkin in the oven, and after is completely cooked just mash it with butter, milk, salt and pepper, until it becomes a rich, creamy paste.

Things to Consider - Choosing Frying Pan

Buying a frying pan is a really tough job especially when you need the one in which the non-stick doesn't come off. So you need to give a thought to this, to make your cooking enjoyable and let your frying pan last for years.

Cast Iron Pan

I am sure most of you might be looking for a general purpose pan which has a good quality non-stick surface that can be cleaned with ease and also reduce the fat content in the food. You can pick a number of such pans for different purposes. You must also consider the depth while choosing a frying pan. For an example if you cook omelettes then you would require having shallow sides so that the food can slide out easily. In case you start off a dish and add sauce then you might require a frying pan. Apart from this, you need to make sure that your frying pan should have a good heavy base. Some brands like Swiss Diamond or SKK might be an expensive option but can last for years.

Cast Iron Pan

You can also pick stainless steel frying pans which have a good appearance but do not conduct much of the heat unless they include a sandwich of aluminium or copper in the base. While cooking you would require paying a lot of attention since the food stuff can also stick and burn. Hence you need to take a lot of care that you do not overdo things.

You can also choose the frying pans that are designed from cast iron. The best part is that it heats up slowly and holds the temperature and thus conducts the heat quite evenly. If you are a lover of the Eastern food and dry spices then this could be the best choice for you. However if you get a large cast iron pan home then it can be quite heavy.

Nowadays there are alternatives to the non-stick pans. These are available in the form of blue steel pans. Blue steel pans are basically untreated mild steel. The best feature is that these are inexpensive and offer you good results so that they have a longer life and can also be used in combination with the metal utensils. They need to be handled with proper care and also require to be seasoned carefully before these are used. For this purpose, you need to wash the pan in soapy water followed by drying it and heating it up. A heatproof brush can be used for the purpose of coating it with groundnut oil or corn oil. It is advisable not to use sunflower oil or olive oil since they tend to make the frying pan quite sticky. The pan is supposed to be heated until the oil is smoking and then can be allowed to cool. You can then wipe it clean and repeat the entire procedure. Thus a lot of care is required in case you choose a frying pan designed from blue steel.

Thus these are among the plenty of options available in the market nowadays!

Cast Iron Cookware - 7 Steps To Prepare Chili Recipe

If you are planning a camping trip and would like to have all your favorite dishes cooked with ease then you should carry a cast iron cookware along with you. It is one of the most popular and best camp cooking equipment you could ever find out. You can prepare various delicious meals for your friends and family with this cast iron ware.

Cast Iron Pan

The durability and ease of use are some of the factors that has added to its popularity. Just a little care and maintenance would double up its life. Dutch ovens are also a kind of cast iron cookware and are known for their thick-walled vessels. These dutch ovens have tight fitting lids to ensure the best cooking experience.

Cast Iron Pan

You can bake the food at campsite with this dutch oven similar to the way you do it in your kitchen oven. If you are with a large group of campers then it would be better to carry a wide and deep dutch oven to cook more servings at the same time. But if you are only a few people then a shallow and small dutch oven would be sufficient for your requirements.

This has many recipes in its arena with a delicious and unique flavor. If you are using a cast iron for the first time or had washed it with soap last time after use, then you need to season it before use. It is better not to use detergents and soaps if you do not want to season your cookware again and again. To clean cast iron cookware you can scrub inside it with hot water.

To season the cast iron ware you need to cover the inside of the oven with cooking oil and then place it upside down on the kitchen oven until the inside of the oven is smoked. Repeat the procedure once or twice for better results and then wipe it with a clean cloth.

The main reason behind the unique taste of the food cooked in cast iron cookware is due to the slow heating process in such an oven. Actually, heat is absorbed slowly and slowly in cast iron cookware. To fuel up your campers you can cook hearty meals or dishes such as soup, stew, roast and chili.

You can try out a chili recipe that would warm up the campers on a cool night.

1) Place the cast iron cookware or oven on the hot coals and brown one pound of lean ground beef at the bottom of oven.

2) Then add one chopped green pepper and medium sized onion.

3) Put one can each of pinto beens, tomato sauce, diced tomatoes along with a cup of water into the mixture.

4) To season up the dish add one teaspoon salt and one tablespoon chili powder.

5) You need to stir all the ingredients and bring the dish to a simmer.

6) You need to stir occasionally for an hour in a simmer stage.

7) Decorate it with crackers and grated cheese for presentation.

Red Potato Recipes - Easy Potato Recipes

I love red potatoes because they are so versatile, not mention all the vitamins that go into your meal when you add the red potato as a side dish. The white potato itself, red skin or otherwise, boasts almost half the daily requirement of vitamin C and over 600 mg of potassium. One of the big questions when preparing potatoes is always the same "To peel or not to peel?" The choice is totally up to you, but if you eat potatoes with the skin on you are adding about 2 grams of fiber per serving. Mom would be so proud! Just remember to hold the potato under cool water while using a vegetable brush to clean the skin really well before cooking. Below are a few of my favorite red potato recipes and I have even added a couple of variations.

Cast Iron Pan

Easy Steak Fries:
*preheat your oven to 350 degrees
*about 2-3 potatoes for each adult
*clean the skin or peel potatoes and pat dry
*cut each potato into 4 wedges
*place in a large bowl and drizzle generously with olive oil, salt and pepper
*toss to make sure all potatoes are coated well
*for easy clean up line a cookie sheet with parchment or wax paper
*place potatoes on paper-lined cookie sheet for about 20 minutes, then turn and cook an additional 15-20 minutes.
*Potatoes are done when they are firm to the touch and start to brown.
*Serve with ketchup or your favorite dip

Cast Iron Pan

(variation) instead of salt and pepper use fresh or ground rosemary

Yummy Mashed Potatoes
*In a 2 1/2 to 3 qt pot fill with enough water to cover the potatoes about 2 inches
*about 2-3 potatoes for each adult
*clean the skin or peel potatoes
*quarter potatoes and then cut each quarter in half (you should have chunks of potatoes)
*boil potatoes on medium-high until tender, then drain water (about 20 minutes)
*put potatoes back on a very low fire
*use a potato masher to smash the potatoes, then stir with a whisk, or fork or hand mixer
--FOR EVERY 6 POTATOES
*add about 1 teaspoon butter, and 1 tablespoon milk
*season with salt, pepper to taste and stir well

(variation) - add about 1 tablespoon sour cream for every 6 potatoes
(variation) - add about 1/8 cup cheese for every 6 potatoes-whatever kind you like, cheddar, american, colby...
(variation) - add about 1/2 clove garlic for every 6 potatoes and put the garlic in the pot when you first put the potatoes in

The possibilities are endless with red potato recipes and that is the good thing. There is very little stress. If you are in a hurry when trying these red potato recipes, just skip the skinning process. Give them a good scrub and start cooking. Keep them on-hand for a quick, nutritious meal anytime, day or night.

Cast Iron Skillet Care

Some brand names as the elderly and pans highly collectible cast iron Griswold and Wagner. The books have both brands with the information about the types and sizes and what they were written value to collectors. You can still find in pots flea markets, flea markets and thrift stores where they can be purchased for a few dollars. These old cookers offer many years of excellent service for cooking.

Cast Iron Pan

New and used cast ironPans that have been cleaned and dressings. New pans before being seasoned pans used, which are cleaned or washed to the point where the smooth patina cooking area was also removed in the process of maturing. First wash the pan or pot in hot soapy water and dry immediately. With a cloth soaked in oil or melted fat solid and wrung out, rub the entire surface of cast iron, the stranger and the cover. Heat upside down in a 350F oven for one hour. Turn oven and leave the cast iron skillet in a safe place to cool. If the pot has a heavy build fat burnt caked on the bottom and sides, you must remove it with oven cleaner and scrape well and wash, before, after the above process.

Cast Iron Pan

How do you clean cast iron after cooking in it? Use hot water and soap (even though many experts avoid soap unlessthey'll be re-seasoning) and clean the pan by simply pouring boiling water over it and wiping it clean with a paper towel. Never use harsh detergents on cast iron. Dry at once.

When do you re-season your cast iron? When the skillet is rusty or the surface appears dull, not shiny, or when food has stuck to the bottom. Scour thoroughly with steel wool, then re-season as explained above. Store, uncovered, in a dry place.
